Blanc de Blancs

A brut sparkling wine made by the Charmat method from Chardonnay alone, fermented cool to keep the aromatics and given its second fermentation in tank for a fine, lasting bead. The grapes are hand picked on the estate at Găvănoasa, in the protected Valul lui Traian zone of southern Moldova, with yields held to six tonnes a hectare. Eight thousand bottles were made.
